This is a simple butter that goes beautifully over a grilled steak; my personal favourite is a ribeye steak, I find it has the right amount of fat content, flavour and if cooked with love as tender as a fillet steak. I love this simple butter and it is my go to sauce for steak.
I like it garlicky & spicy but you can adjust quantities to your own preference. The following recipe serves 2 people generously, not for the faint hearted.
- 150 g Unsalted Butter
- 2 tbsp Parsley, finely chopped
- 2 – 3 Garlic Cloves, peeled & finely chopped
- ½ tbsp Chilli Flakes
Leave the butter out to soften to room temperature, meanwhile pick and chop the parsley, peel and chop the garlic. Once the butter has softened slightly add the garlic, parsley and the chilli flakes and season with Maldon salt flakes and freshly cracked black pepper. Beat with a wooden spoon until all is combined.
Once your steak is cooked to your liking, spoon the butter on the top and let it melt all over. This butter would also work well with a nice piece of grilled salmon with slightly less garlic.
